I add the juice of one lemon per litre of skimmed milk, and leave it to stand for half and hour - works well in everything I've baked so far (especially treacle bread - yum).
The other recipe that works, if you're in a hurry, is half natural yoghurt, half skimmed milk. I've not used it myself, because I think the first version is cheaper.0 -

Have you ever tried freezing this? Just that there is never enough milk in if I don't plan ahead (not that I'm discouraging my daughter from drinking it, but it is rather hard to keep up with her!!What is this life if, full of care, we have no time to stand and stare0 -

My late Dad did the most fabulous 'girdle scones' on my gt grannies handed down iron girdle. He used milk that had turned. In those days (1950s) there were not so many fridges about .My Mum kept her milk in a pail of water in the scullery and when it had gone over Dad used it up in scones on a Sunday afternoon which we had for tea then what was left over was toasted on Monday.I guess a good squirt of lemon juice should work the same .Nowadays rarely do you get milk going off as its treated to last for a longer time.
We used to have 'gold top' channel island milk delivered by the local dairy man from a horse and cart and the 'top of the milk' was fought over between my two brothers and I as it was so thick it was almost like cream.Never had semi or skimmed milk in those days and I'm still around 68 years later0
