What is a tap root?

Sorry, this shows how completely clueless I am, but the book that I have been reading about vegetables says for beetroot and carrots I need to plant them out before their tap roots develop. What is a tap root?

The tap root is what will essentially become the carrot, the carrot is the root of the plant. Have you ever pulled up a dandelion? They have a tap root too, it's kind of like one thick tuberous root rather than lots of fine ones if that makes sense?
