Can you eat the flowery bit on sprouts?

I had a good crop of sprout that are just coming to the end, i know you can eat the spout tops but what about the flowery bits that look like purple sprouting broccoli, does anyone eat them as well?

I have tried them, they tasted OK but the texture was a bit stringy.

Pick them while they are young and they are delicious.
