Advice on a sale I want to cancel

Hi all,
Looking some quick advice please. I just sold a mobile phone on Ebay and my listing said UK or Ireland postage only. I cancelled a bid from Lithuania, but the winner of the auction sniped in at the last second and is registered in Malta. I sent a message tellling him I wouldn't ship there as I couldn't track it and opened a case with Ebay to cancel the transaction.
Short time later, this guy emails back to say he can supply a shipping address in UK, so my alarm bells go off. This guy then pays through Paypal, EBay close the case saying I must ship the item, but the Paypal details show the Malta address and show it as confirmed.
Surely if I now ship to a UK address, which hasn't yet been supplied, I lose any protection I might have through Paypal?
I reckon I need to ring Ebay and talk it through and ask them to cancel again, any thoughts?

refund payment - request buyer to add UK address to paypal as GIFT ADDRESS then pay you again and all should be ok0

Also reset all your seller preferences so this can't happen again.
