crack two eggs and a little milk into a cup and whisk. get pan hot with oil. fry onions, then add bacon, mushrooms, peppers etc... then add the egg mixture

Don't stir the egg once its in the pan, just let it cook.Think of it like a pancake. it should be able to "move" when it's cooked. then sprinkle grated cheese on top, flip half of the omelete over onto itself and serve up!

When I make an omelette I just break eggs into a bowl, add a little milk and as much cheese as you would like (cheese optional) and whisk together. Get fat/oil hot in the frying pan then pour in the eggy mixture. Leave it. Don't touch it at all until the edges are cooked, I like to flip mine over as I don't like the top to be liquid at all. Sometimes if I do a huge one then it won't flip without breaking up, just put it under a hot grill to cook the top.

When cooking gently push cooked parts towards the middle and allow wet parts to dribble toward bare parts of the frying pan. when just about cooked, allow to cook without any pushing around and either fold in half to let middle cook or put under grill.

Actually made the perfect omelette. I think i was adding too much milk before and not leaving it long enough to cook. Anyway had it for evening meal and everyone enjoyed. Thankyou .

  • I definitely agree with the other poster about under the grill

I crack the eggs and beat them with some milk then put them in a frying pan on a medium hob.
I whisk it about with a fork until it starts to go scrambled as it starts to set, but while there is still runny egg mixture to cover the base of the pan.

Then add the ingredients, top with grated cheese and pop straight under a heated grill and finish it off there.

Every time I try to turn it the mixture scrambles, the grill is the secret for me.

Also have you tried doing a frittata, it is lovely. Just add some sliced new potatoes that have been boiled while sliced for 10 mins, and add it to the egg mixture, maybe add peas and some smoked salmon. Cook on a low heat for about 10 - 15 mins and finish off in the grill. It is wonderful, and very filling.

Not sure, but I don't believe the professional chefs use milk at all. I never use milk when making my husbands favourite omelette style butty.

The important thing is that the egg should not be completely cooked through when removed from the pan. The heat in the omelette continues to cook the rest.

By the way, the best way to make scrambled eggs was given by a chef on TV. He put a tbsp cold water in a smallish pan, added a blob of butter and when it had almost melted just tip in the eggs whole and whisk a little in the pan. They really are better. Definitely no milk for this one.

I agree with Jake's Gran , no milk and you must cook it in butter. Also agree that the omelette should not be cooked all the way through.

I wouldn't grill my omelette unless it was a Spanish style one. Also make one for each person, don't try to make huge omelettes.

    Here's what I do;

Heat a small frying pan until really hot.

Break 3 eggs into a basin, beat lightly until nearly all the yolk and white are mixed. Salt and pepper.Chopped chives are good too.

Add a good lump of butter to the hot pan, swish it around and pour in your eggs.

Immediately start drawing the edges of the omelette into the middle with a fork.Tilt the pan so that liquid egg runs into the gaps you have created. When it has nearly all set add some filling - handful of grated cheese, ham, cooked mushrooms, smoked fish to one side of the pan.

Flip the other side over and shake gently onto a hot plate. Then make your next one.

I know alot of people who eat omelettes that are still a little runny. The thought of me ever eating one like this makes my stomach turn (insert being sick smiley :D )

Ahh, but the point is they're not runny because they finish cooking by themselves when you flip them over and turn off the heat. They should be nicely moist, but not liquid, that would be yuk indeed;)
