Coleslaw....can you freeze it?

Hi,
Seem to be eating more and more salads at the moment. Bit of a silly few questions probably... :rolleyes:

Does it work out much cheaper to make your own coleslaw, I assume so? However, If you make it, how long does it last in the fridge?

Can I make a big batch and then freeze it into smaller portions?
Can I freeze it before I add the mayo/salad cream, or after?

Any help would be appreciated as I'd much rather know exactly what goes in my food! :D

    I wouldn't freeze coleslaw. Mayo contains raw eggs, and of course, your veg is raw too.

    Not sure if it's cheaper, but it tastes delish and at least you know what's in it. I've made my own mayo before now too, keeps for a few days in the fridge. When you realise how much oil goes into mayo, it sure makes you think!!!

    1,000 Posts Combo Breaker I've been Money Tipped!
    This is recipe from an American book for Refrigerator Coleslaw.I've not tried it, but the recipe says it will keep in covered containers in the fridge for several months.

    It makes a huge amount so I've halved the quantities for you.It also contains a LOT of sugar which is why I've not tried it.

    Chop or shred finely
    1 large white cabbage
    1 stick of celery
    1-2 carrots
    1 onion
    (I would imagine you can easily vary the proportions of the veg - I'd put in a lot more carrot)
    Salt generously and set aside.

    Dressing
    1 cup sugar(8 fl oz)
    1 tsp salt
    1 cup vinegar
    pinch of pepper
    1 tsp of celery seed

    Put all dressing ingredients in a pan and bring to a boil.
    Cool.
    Squeeze the veg dry and mix with cooled dressing.
    Store in tightly covered containers in the fridge for several months.

    Thanks for that Thriftlady. Yes lots of sugar and salt too so might kinda defeat the purpose of having salads!! ;)

    Having said that.. never actually checked the sugar and salt content on the tubs of coleslaw I buy, though I do usually choose "healthy/low fat" one but guess that doesn't mean low sugar or low fat... :rolleyes:

    Oooh, how interesting!! I love coleslaw :drool: I wonder if you could adjust the amount of sugar that goes into it? A few of the recipes I have that call for salt I don't add it, and the ones that call for sugar I reduce it (sometimes it turns out to be an experiment :p)

    I made some coleslaw last week and made far too much. I decided to half it and put one portion in the freezer, although I knew I was taking a chance of it splitting. When I took it out yesterday and allowed it to defrost, it didn't split at all, and was just as good as the day I made it. I used low fat mayonnaise (Mr T version) and added a bit of Sains' Basic Salad cream which is quite low fat anyway. It worked a treat!

    I take it the veg didn't go all soggy ??

    I might need to try this....

    No the veg didn't go soggy, but I used it straight away after defrosting. Was surprised how fresh it looked and tasted. ;)

    I love costco's coleslaw but obviously its only sold in big tubs. Does anyone know if it can be frozen? I've heard that mayo cant but dont know if thats true/if coleslaw can? Thanks

    Coleslaw is mayo with crunchy bits in so I wouldnt as I wouldnt imagine that it would be very nice when it came to defrosting it
