    here's the quanities for anyone interested,

    5oz fresh breadcrumbs(another 4oz approx for coating)
    1 small leek,very finely chopped/or put in food processor
    3oz grated caerphilly cheese
    1 tablespoon chopped parsley
    pinch of dry mustard
    2 eggs and 1 yolk (keep the white for the coating)
    salt and pepper

    mix all together,add a little milk if its too dry to hold together.
    make into approx 12 sausage shapes
    coat in flour,the egg white (lightly whipped a bit),then more breadcrumbs
    chill for 20 mins before shallow frying till golden brown.
    lovely.....

    (these can be frozen uncooked)

    Being welsh lol i also love Caerphilly cheese ans in true welsh spirit I would reccomend either welsh rarebit yum yum yum - try using some onion relish or chili jam below the cheese or stuffed jacket potatoes - cook some leeks until sort (in butter is yummier) scoop out the middle of some baked potatoes and mash with the leeks, caerphilly cheese and some of any of these:herbs/garlic/boursin cheese/cream/philly/put back in the oven until brown and bubbly
