Caerphilly cheese

I have 250g of caerphilly cheese that I bought on a whim and now I don't know what to do with it!

Would ideally like to use it in a main course rather than in sandwiches or on crackers etc

Anyone have any ideas? xx

    Mmmm caerphilly cheese. Yum yum. What about a flan, quiche, macaroni/cauliflower cheese or one of my low-budget favourites cheese fritters?

    I've used caerphilly before in recipes that call for feta cheese, as the taste and texture is vaguely similar. About the best of my substitutions was a spinach and caerphilly lasagne, topped with tomato sauce and grated parmesan, which was very tasty indeed. (And which I'd forgotten about until now - I'll have to make it again now I've remembered it. :))

    If you have any left and do fancy a sandwich, try caerphilly and mango chutney - it used to be one of the staples of the catering department where I work and was one of the few that was genuinely tasty rather than merely edible. (Sandwiches are now made by an external company and bought in, which seems daft to me.)

    sorry nothing useful but its my fav i tend to just eat it so it never gets very far maybe as a cheese topping for pasta bakes/mac cheese etc

  • Hubby makes a salad with mixed leaves, spring onion, cucumber and tomatoes, crispy bacon, hard boiled eggs, croutons and crumbled white cheese (he uses Cheshire but Caerphilly is similar) then just before serving drizzles some sort of salad dressing over it all (blue cheese is good or honey/mustard) -gorgeous it is!

    make some mash, crumble most of the cheese in, stir, put in an oven dish, top with the rest of the cheese, bake, eat, drool!!!!!!!!!!!!!!!!!

    try this - its not main meal but its my most asked for contribution to get-togethers and parties
    cheese and tomato tartlets
    a pack of filo pastry
    cheese - caerphilly, cheshire, feta or similar - stilton goes nicely too
    tomatoes - cherry halved, or ordinary -sliced
    basil leaves
    butter (melted) or olive oil
    grease a bun tin with butter and turn the oven on to about 6 or 7
    cut the filo pastry into 4inch squares and lay one square in each depression in tin, now brush more squares with butter or oil and lay over the squares so the points form a star- keep doing this until you have 4 or 5 layers
    now crumble some cheese in the bottom of the tartlets and top with a basil leaf. add a little more cheese and top with either a half cherry tomato or a slice of tomato (if you want at this stage you can sprinkle some salt and pepper on.
    bake in the oven for about twenty minutes until the cheese is melted and the filo pastry is browned.
    turn them out and leave to cool slightly before serving - they are good cold too. but absolutely delish warm.

    I think I will go for the flan/quiche or salad idea

    Or maybe the cheesy mash...

    Now I will have to go and buy another pack to make all these delicious recipes!!

    how about glamorgan sausages, no meat,basically caerphilly cheese,very finely cut leeks,breadcrumbs,egg,salt and pepper,made into sausage shapes,then coated in flour,egg and breadcrumbs and shallow fried,served with a nice tomato chutney or caramelised onion relish and a salad
    can give exact quanities if interested
