i love roasting courgettes, tomatoes, onions, mushrooms, peppers and whatever else you fancy with a little bit of oil and a sprinkling of salt. wow, delicious with cous cous :drool:
carrot and turnip mashed into potato is good too.
carrots roasted with herbs - can't remember whether it was thyme or rosemary, but have a play and see what you like.0 -
Stuffed baked potatoes: bake potatoes, scoop out the middle and mix with chopped leek, tomato and edam cheese. Add some butter and salt and pepper, pile back into the skins and put back in the oven for half an hour. Yummy!0

last night i made a fish pie and was just about to serve when i realised i hadnt done any veg at all!
i plopped a little bit of butter in a frying pan, chopped a few leeks and threw them in then stirred in a dollop of philadelphia, i also had a parmasan cheese rind sat in the pan to use up the last of its flavour (remember to take it out before serving though!) it took 2 minutes and it was gorgeous!0 -
In a pan sweat off some diced carrot, courgette and mushroom with butter. as it starts to catch add a teaspoon of Cajan powder and keep it moving til its all coated. Then whack them on the baking tray in the oven until they look yummy
v. nice!

On the rare occasions we have steak sandwiches for tea, I always slice some mushrooms finely and sautee them with a bit of butter. Then, when they're softened, add a good shake of fajita seasoning and cook a little more until they're covered in a darkish savoury sauce. They're lovely with steak.

My daughter and I love broccoli with lemon mayonnaise (just add a little grated lemon rind and a tsp or so of the juice to the mayonnaise and use it as a dip for the broccoli). Sometimes we have this as a 'starter' if we're having, say, something-on-toast for supper. How healthy it is depends on the ratio of broccoli to mayonnaise!0

I fry leeks in olive oil then add a bit of cayenne pepper to give a kick and some garlic paste
