Fritata

I made this earlier - it serves 2.

Stir fry some chopped mushrooms,peppers and bacon pieces.

Whisk 3 eggs and add a dash of milk, pinch of mixed herbs and seasoning.

Pour the eggs over the stir fry and when set cover with sliced tomato.

Sprinkle grated cheese over the whole lot.

Pop under a hot grill until melted and bubbling

Serve immediately with crusty bread - (and salad if you are trying to get your five a day in).

(I think it's called a fritata).

    Frittata is the generic Italian name for omelette and it can be filled with whatever leftovers you have.

    A special treat, I have always found, is Frittata di maccheroni - better done with leftover spaghetti rather than short pasta, but all types of leftover pasta ok too.

    Fry leftover pasta in a non-stick frying pan, so that it covers the whole bottomof the pan (ok either undressed or even better if already dressed with sauce/cheese etc - more savoury).

    Beat eggs and pour evently over fried pasta, cook covered on low heat until egg is visibly cooked, then either stick under grill to finish or turn frittata by sliding over a large lid and flipping over (I hope you understand what I mean).

    Serve with salad, and presto, a complete nutricious meal is done!
