Surely it can't be the end of the week again already?!

Here's my plan for the coming week - it's actually the third plan I've done but, once it's posted, it tends to stay fairly fixed (well, fixed-ish, if I stick to it :o).

Friday - prosciutto and smoked mozzarella pizza with tomato, rocket and parmesan salad (it's an attempt to recreate a wonderful meal I had on holiday last year - if it comes out even half as tasty I'll be pretty pleased)
Saturday - cheese and onion crispbakes (ready made), LO beany bake (currently in the freezer), steamed purple sprouting broccoli
Sunday - HM ploughman's sausage roll and salad
Monday - sausage and baked bean casserole
Tuesday - sausage meatballs in cheese and tomato sauce, HM garlic bread
Wednesday - smoked mackerel kedgeree (well, it's sort of kedgeree-ish, anyway!)
Thursday - pasta with leeks, sun dried tomatoes and blue cheese

Lunches will be sandwiches, and I plan to make some fruity flapjacks with the remains of a box of slightly stale breakfast cereal I found lurking in the back of the cupboard. :o

What's everyone else having, then? :)
Back after a very long break!

The weeks definitely seem to be coming around quicker! Not long until the clocks go back though and the nights get lighter :T

I'm starting full time work next week as part of my college course. It's the 'work placement' bit of it. Basically I work for a company (the training providers actually :rotfl:) for 4 weeks and if it all works out for both parties then I'll be fully employed. I did originally want part time work to ease me back into the swing of it as it were but I would love this job. Menu planning is more important for me than ever now.

    We are having:

    Monday - Chilli & Rice

Tuesday - Sausage Casserole - made in the slow cooker with the potatoes added so it's an easy one pot meal ready to serve when I get in ;)

Wednesday - Treat of Takeaway :T

Thursday - Stuffed Baked Potatoes with Beans

Friday - Spaghetti Bolognaise with Garlic Bread

Saturday - Minestrone Soup with Crusty Rolls followed by Cheesecake

Sunday - Lunch: Grilled Chicken Breasts with Chilli & Garlic, Roasted Plantains, Red Rice and Mixed Salad with Olives

Sunday - Tea: Tuna or Salmon Sandwich with a Carrot Salad

On the course are two fabulous cooks - they brought in a selection of food for everyone today as a celebration of us finishing the initial bit. Oneof the ladies is from Jamica and the other is from Africa and the food was amazing :T:T Our Sunday lunch is inspired from their recipes which I have been busily scribbling down for the past month :D I've been getting fed up of the usual Sunday roast so am giving something a little bit different a whirl.

I haven't done any baking at all this week :o and have resorted to buying stuff for the children to snack on. I still cook our evening meal though so I'm not worrying too much or making myself feel guilty.

    Happy cooking everyone!
