how should i fill this gap

just removed an old doorframe from my stairs.
the resulting gap in the plasterboard wall is 11cm across - on one side it is 1cm deep, on the other it is 2cm.
so I was thinking put some 0.95mm plasterboard in the gap, then put some finishing plaster over that and create a gradual slope from the 2cm side to the 1cm side. or would i need some undercoat plaster between?
also, why would the previous owners have a door on the stairs!?

Sounds like a good plan. Who knows what previous owners arrangements entailed.I can afford anything that I want.

Tapering the thickness of plaster would work but it's not the easiest option and for me, at any rate, plastering needs a fair bit of skill.
Could you nail a 1cm thick batten or wood bead against one edge then fix your 1cm plasterboard on top,across the gap? This should give you the effect you need ie 1cm thick at one side and 2cm thick at the other.
Also, consider using MDF sheeting. More expensive but easier to handle and less messy then plasterboard.
