Corn Dogs and IKEA meatballs

    I think most of the supermarkets do meatballs, I usually buy mine in Ikea but its a bit far for me to go as well when I've run out. I've managed to buy fresh ones in Morrisons, Tesco and Sainsburys but they don't always have them. Its just a faff to make them all the time, its so quick to buy ready made. Our family fave is cooking of them in passatta or tinned tomatoes and serving with spaghetti.

    I second the Lidl ones. Just polished off a bag of frozen meatballs and they were gorgeous! I do hope it's not seasonal, I'll have to stock up. But then you're back to square one like with Ikea...hmm.

  • Ok, this recipe is pinched from Ikea's Real Swedish Cookbook:

    Meatballs:

    250g Minced beef
    250g Minced Pork
    1 Egg
    200 - 300 mls cream and wine (Or milk and water)
    2 1/2 tbsp Onion chopped
    50 mls Rusk Flour (I have no idea what rusk flour is or how you would even get it, so I assume breadcrumbs would do the same job!)
    2 cold boiled potatoes
    4-5 tbsps or either butter, marg or oil.
    Salt and pepper

    Fry onion until golden in a couple of tbsps of butter/marg/oil. Mash the potatoes, and losen rusk flour (if using) in water. Add eveything else, apart from butter/whatever fat you are using, and mix until smoothish. Add Salt and Pepper, and some allspice if you want and then divide into balls, roll in a bit of flour, and fry slowly until cooked in plenty of butter/marg/oil.

    And if you want to cream sauce that goes with it:

    100 mls of cream
    200 mls for beef stock
    Soy sauce
    1 tbsp flour (optional)
    salt and pepper.

    Bring beef stock to boil, then strain the pan, and mix with the cream, salt and pepper. Can thicken with flour if required.

    I haven't tried any of these recipes yet, so I don't know what they taste like, but they sound nice!

    We just found some cornmeal in Sainsbury's today in their "specialist ingredients" section. This is with the intention of making our own corn dogs, haven't made any yet, will let you know how I get on haha!
