Hi - I have half a packet of fresh mint left over from making Pimms at the weekend
If I chop it up and pour on some vinegar, will it keep for mint sauce next time we have lamb? The only other thing I can thing of to do with it is a dip, but haven't really got anything to eat this week to go with it - again, more of a lamb thing. Any ideas appreciated. Oh - and I also have some dill.

Ooh - with fresh mint I make a variation of mint sauce
Chop mint
Finely chop a shallot or spring onion
Mix together in a bowl with vinegar and sugar to taste

Why not freeze it. Either in water in icecube tray or just a in a bag in the freezer.
This comes from a woman who killed off the mint plant her mother only gave her last week

minted onion salad!!
slice onions into rings and seperate out, put into jar
Chop mint and add to vinegar with some sugar (mint sauce!)
cover tha onions with mint sauce and leave for at least a week

Chop finely about ½ cup of mint. Mix into 1 cup of natural yoghurt with 2 tbsp lemon juice.
Keeps in the fridge for a couple of weeks.
Lovely cool dressing for baked spuds, salads and goes great with curries and other hot spicy food to cool it down!Here I go again on my own....0 -
