Does he like chicken? If yes then chicken stuffed with buffallo mozarrella, fresh basil and sun dried tomatoes (cherry tomatoes will do) is lush (wrapped in pancetta or bacon makes it even nicer)
You say he doesnt like pasta but presume he must like spaghetti or do you have bolognese with something else instead? If he likes spaghetti, carbonara is really nice (and its got bacon in it which he likes.)

p.s Is he the type that will say he doesnt like something even though he hasnt tried it? If yes you should do what I do sometimes with certain members of my family and cook something but dont tell him in advance what you making or whats in it.
