Please Help! Suggestions/Advice needed for May/June 2-week holiday

Hello,
I posted on here a while back and narrowing my holiday search has since become even more muddled! Any help or suggestions would be appreciated. The situation is:
Holiday time from work available: one week to take before end of May and one week or more to take after June when new entitlement is given so ideally we could combine into one holiday. Anything between approx 25th May to 15th June would be perfect.
2 Travellers: me and my wife.
Duration: 14 nights.
Ideal star rating: obviously as high as possible but as long as it's clean, tidy and the food is good we're open to any suggestions.
We'd like somewhere which will be hot, a few things to do (day trips/excursions available, etc.) but not necessarily loads of hotel/resort entertainment. We don't want to be in the middle of a British tourist area with fish and chips everywhere, nor do we want to be in a place that's the favourite destination for one nationaility of people so that there is a bit of culture to sample!
Budget: Approx £850 each plus spending money but could push it a little more (not too much). The all-inclusive was a plus in reducing the overall budget but not a deal breaker if there's value to be had.
We were almost going to book Jamaica - the Decameron all-inclusive - for £840 pp but were told that it would be very rainy during May and June. The reviews on Trip Advisor were generally good, too. We had looked at some nice places in the Greek Islands (Santorini) but these were £600 without any food/drink so the overall cost would be going up a lot with that added cost. We'd also considered Morocco, Portugal (doing a rental and Easyjet flights) but just can't decide!
CAN ANYONE HELP?? Thoughts/suggestions greatly appreciated!

PS - We have been to the Maldives (for honeymoon) and also New York and Thailand in the past three years, and we've also been to Lanzarote and Fuerteventura in the past so are keen to avoid those places if possible...just for a change!0

What about Hurgarda on the Red Sea not as commercial as Sharm, you could visit Luxor from Hurgarda and take in some sights of the temples there is stuff to do in the resort but not as hectic as SharmI am a Travel Agent

Kefalonia one of the Greek Islands is lovely at that time of the year. Scala can be a bit touristy, I like Poros. Plenty of tavernas, things to see and do on the island. Sami is where they filmed capt Coreli's mandolin.

Jamaica definately isn't rainy during May and June, Hurricane season starts July so thats a perfect time to visit. I would go with the Jamaica holiday my self, thats a really great price.
(Who is that with, if you dont mind me asking?)
Also I noticed a good Mexico deal on Travelzoo, cant remember the details but it was around £850 for 2 weeks AI June£100 - £10,0000
