    I would definitely try the sponge flour whatever method you use! It makes lovely cakes.

    Same thing happened to my cup cakes yesterday! I always use the quick mix method with stork and they are normally lovely but yesterday they were yellowy and greasy, think I will add the extra 1 oz of flour and try another batch tomorrow!!

    Really? I use 100g sugar, 100g butter, 2 eggs and 175g flour for fairy cakes (more flour than for a sponge cake recipe).

    I would use three eggs for about 24 cup cakes or a 20cm sponge.
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o
