Greasy fairy cakes

I would definitely try the sponge flour whatever method you use! It makes lovely cakes.0

Same thing happened to my cup cakes yesterday! I always use the quick mix method with stork and they are normally lovely but yesterday they were yellowy and greasy, think I will add the extra 1 oz of flour and try another batch tomorrow!!Slightly bitter0

My cakes always turn out well. I use 100g Kerrygold butter which I cream very well with 100g caster sugar. Keep creaming and creaming until your arm falls off! Then I add two medium to large eggs and give the mix a very quick whisk with an electric whisker (don't overdo it at this point). I then use 100g flour (about 75g self raising and the rest I use McDougalls Supreme Sponge flour - its fantastic!). The flour has to be carefully folded in with a few sprinkles of vanilla essence. Mmn! Love fairy cakes!
Aren't they very eggy? You've double the eggs to a normal sponge recipe! :eek:I was born too late, into a world that doesn't care

Really? I use 100g sugar, 100g butter, 2 eggs and 175g flour for fairy cakes (more flour than for a sponge cake recipe).

I would use three eggs for about 24 cup cakes or a 20cm sponge.I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off
