Should I wait until the last minute?

Hi everyone, thought i'd break my silence and post my first question!
Me and the girlfriend have got some time booked off from work from the 4/8 for a week. She's still a student so the budget is pretty tight (ideally under 200 quid pp), we ideally would like to go to crete or a (non lager lout) greek island. Although the real requirements are:
1) The beach is nice for her
2) The beach has some interesting snorkeling for me
3) Nothing too remote as we won't have a car
4) A lack of beer drinking english louts
Possibly a tall order given the budget, but i'd love to here any recomendations on places that fullfill the above criteria... to be honest I don't know any of the names of the resorts. So any places / websites would be handy.
Second part of my question is, how long should I leave booking it for? Is it worth booking in the next couple of days or waiting until the 2nd of august?

If you can find anything under £200pp now then book it..
To be honest i doubt you will find anything that cheap untill a couple of days before . But there will be very little choice and crete may not be on offer. Remember the accomodation will be the place nobody else wanted too ( or the non-brochured shoddy place the company uses for late deals )
mytravel.com ( which checks all their subsiduarys - eg direct holidays and panorama) have had some reasonable deals for Zante on the 5th/6th August. Keep checking their site every day for bargains. £300 pp is more realistic at present though ( and its still difficult to find holidays for that price).
Remember all the extras added on to late deals ( tickets on departure can often add £15pp alone) if you wait.0
