So, I got the X-Mart IPX4 Humidistat. Wired the IPX4 live to my pull-cord switched live, neutral to neutral, and left the IPX4 switched live unconnected.
I leave the pull cord on all the time, and as if by magic, it comes on a minute after starting a shower, and switches off once the moisture has gone.
(I imagine the switched live on the IPX4 acts as an override to force fan on, although if the humidistat works, I don't see that as essential.)
