Gillian Mckeith's pea and mint soup - meant to be really easy and quick to make with just mint, stock and peas - but I don't know the quantites

Thanks for looking nicki. It was on one of the repeats on Freeview this week and took about 5 mins to make. I've got loads of mint at the mo and thought it sounded perfect.0

I make pea and mint soup and rarely measure anything - I just chuck in a small packet of frozen petits pois and about a litre of stock into a large pan, after frying off some finely chopped onion. I then add mint just before I blend it - how much you want to add is up to you!0

I've lost the recipe for this but I've been doing it for years so re the quantities I would guess 200ml stock to each 100gms peas? But to be sure I would start with less stock and add more when you whizz it up - easier than trying to take any extra out
Soften a chopped onion - say one medium onion for 4 or 5 servings - add peas and stock. Add mint (I actually add mint sauce - about a tspn) and cook until peas are tender. Whizz and adjust seasoning to taste and thickness to suit you by adding extra stock. A pinch of sugar seems to help too.
My original recipe added some dried milk powder but I stopped doing that ages ago, but you could if you wanted a creamier soup - personally I like the green pea flavour. This soup freezes well too.
