To disconnect my hob and oven do I just switch off electric at mains and unscrew the wires on the appliances, or should I call a spark out as I dont fancy getting electricuted .

The above is good advice.
If you do decide to do it yourself (I wired up my hob), it is a really good idea to switch off the electric mains too.
My oven just runs off a normal 13A plug, so it is easy.0 -
power off and remove the wires that go between the switch and the appliance at the switch end0

If you're disconnecting the wire at the cooker end you need to make the exposed wire poking out of the wall safe, tidying the ends into a piece of terminal strip ('chocolate block') and enclosing them in a back box and blanking plate.
If you're unsure find someone competent to give you a hand. It doesn't really need a paid for sparky.A kind word lasts a minute, a skelped erse is sair for a day.0
