Dal Saag and Aloo Gobi Recipe?

Does anyone have a good Dal Saag or Aloo Gobi Recipe? These are the only things that drag us to the takeaway, but I know I could make them if I could just track down a recipe!Oh. and chapatti and naan bread recipes too if you have them please!

    DAL SAAG
    Ingredients

    COLUMN 1
    250 gms Moong Dal
    2 cups Spinach chopped
    1/2 bunch Dill chopped
    3 bunches Fenugreek chopped
    1 tsp Salt
    1 tsp Turmeric powder
    1 tsp Red Chilily powder
    1 tsp Ginger / Garlic
    2 - 3 cups Water
    __________________
    COLUMN 2
    1 Onion chopped
    1 tsp Cummin seeds
    8 Red Chillies
    1 tsp Garlic crushed
    1/4 cup Oil or Ghee
    __________________
    COLUMN 3
    1/2 bunch Coriander leaves chopped
    3 - 5 Green Chillies chopped

    instructions

    Pick out any stones that might be in the dal. Cook the dal with all the ingredients listed under column 1 till the dal is tender. Mash the dal lightly on the sides of the pot with the back of a wooden spoon. In a small saucepan, heat the oil and put in all the ingredients listed under column 2. Stir for 1 - 2 minutes. Pour this over the dal and garnish with the items listed under column 3.

    Aloo Gobi

    1 Cauliflower 3/4 ts Turmeric
    4 Potatoes 1 ts Red Chili Powder
    1/4 c Oil 3 Tomatoes
    1 ts Cumin seeds 1 ts Garam Masala
    Ginger, fresh, 1" 2 ts Coriander powder
    3 Garlic cloves

    Cut cauliflower into flowerets. Cube potatoes. Heat oil and saute cumin
    seeds for about a minute. Add garlic and ginger, stir and add potatoes.
    Bhoona, add turmeric and chili powder, and bhoona again. Add tomatoes and
    simmer for about 5 minutes. Add cauliflower and high heat for about a
    minutes. Lower heat, cover and let simmer for about 15 minutes. Curry
    should be damp-dry.

    Chipatis
    3 c whole wheat flour
    1 ts salt
    1 c water
    1 tb ghee

    Sift flour and salt together in a bowl. Make a well in the center
    and add ghee and water. Knead 10 minutes to make a pliable dough,
    form into a ball, cover and allow to rest at least 1 hour, or
    over night.

    Divide dough into 20-24 portions. Roll into 6 inch circles and
    allow to rest 5 minutes.

    Heat griddle or cast iron fry pan very hot.

    Place a chipati on the griddle or fry pan, fry for 1 minute. Flip
    over and fry for 1 minute.

    Makes 20-24 Chipati

    Naan bread
    Makes 6
    4 c All-purpose flour
    1 tb Sugar
    1 tb Baking powder
    1/2 ts Salt
    1/4 ts Baking soda
    2 Eggs
    1 c Milk
    4 -6 tsp ghee

    Combine dry ingredients and stir well until blended. Make a shallow
    well in center, drop in the eggs, and stir them into the mixture.
    Stirring constantly, add the milk slowly until all ingredients are
    combined. Gather the dough into a ball and place on a large baking
    sheet or jelly roll pan. Knead the dough by pressing it and pushing
    it forward several times.
    Do until dough is smooth and can be gathered into a soft sticky ball.
    Sprinkle a little flour over and under it if it sticks to your hands.
    Moisten your hands with a tsp of ghee and gather the dough into a
    ball and place it in a bowl. Place a towel over the bowl and let rest
    in a warm place for 3 hours. Pre-heat two large ungreased baking
    sheets at 450 degrees. Divide dough into 6 equal portions.
    Moistening hands with ghee occasionally, flatten and form each
    portion into a teardrop-shaped leaf, wide at base and tapered at the
    top. Each leaf should be 6 inches long and 3 1/2 inches across at its
    widest point, and 3/8 inch thick. Arrange on baking sheet and bake in
    middle of oven for 6 minutes or until firm to the touch. Then broil
    for a minute or so to brown the tops lightly (My note: not necessary
    if using a baking stone!) Serve hot or at room temperature. Ghee is
    clarified butter. You melt it and remove the solids. However, if
    you're not a purist, plain melted butter can be used.

    Sorry all my recipies tend to be in american measurements, I invested in cup measures and can't go back now!
