    Well the chutney has cooled now. It is quite nice, but tastes mainly of onion. I think it might be a bit too much onion with onion bhajis, but could work well with the sweetcorn fritters, and have the sweet chutney with the bhajis

    Thanks Lesley, that's really helpful :) I'm guessing if we doubled the tomato amount we'd end up with a wonky ratio in the other direction? Or do you think that might help?

    Perhaps I'll wait and see how it is with the fritters when you test that...

    reporting back on yesterday's disasterous first try out of a pork and apple burger:

    took 1lb of sausage meat, tried to extend it's bulk and taste by adding 4 portions of apple, 4 of onion, egg and some hm bread.

    Addition (and using the food processor for pulverising :o) of apple and onion made the mix incredibly runny, and the extras diluted down the pork taste, such that it has nigh on disappeared!

    They were too wet to fry, so I baked a big round disk of it in the end!

    A lesson in taking frugalisation too far :D:rotfl:Hopefully my DH will still eat it... He is one of those blokes who in our family as the boys grow will probably end up being 'Daddy dustbin'- you know, the one who hoovers up everyone's leftovers :)

    I think we decided a little while ago (but you haven't read that far yet I know!) that the list was a bit cumbersome for my tired brain to manage, but can I instead say a very warm welcome, and please do try out the recipes, do the surveys and generally join in with all the banter :)

    as in people struggling to find ways to fit eating into their lives...

    - There is a thread running now - over on the Employment, Jobseeking & Training Sub-forum - by torikate (thread no 29915641) in which discussion is going on as to how fit in food & SLEEP with nightshift working.

    Rather confirms my suspicions that its very difficult to fit in eating properly for another group of low-paid workers (ie those doing nightshift work). In that situation as well people struggle to eat healthily.

    I'm in a low-paid job myself - as you know - but have avoided/will continue to avoid that sort of problem by never even thinking about whether to do night work - I just wouldnt even consider it ever - but I do know a lot of people dont have much choice about whether to do it or no - so we need to bear them in mind too.

    morning all :hello:

    made onion bhajis last night and was impressed with them - think I needed more flour though as the last few didn't fry well. I made them using a combination of Lesley's recipe and the one in the link. Using 2 medium onions we got 13 portions and DH is trying them cold for lunch.

    got a huge pan of chick peas in the slow cooker so that I can try the falafels and the pink hummous!

    sorry to hear about the burgers weezl - would they work better with mince? how much would that push the price up by? I have 3 packs of sausagemeat in the freezer so I'll try and do some experimenting on the burgers too.

    are you off to the hospital today?

    Not if my memory serves me right (well - I am half awake at the moment..:)).

    I believe Weezl said its Wednesday that she will be doing so.

    Just a small suggestion on the burgers, instead of wizzing any or all of the apple in with the pork how about keeping the apple whole and moulding the pork mixture round a chunk of it (a la scotch egg) This will keep the pork mixture drier and add a little interest. If you use a flatish piece of apply you will still have burger shapes.
