How long can I keep cold roast beef?

    Hi skysky,

    I would normally only keep roast beef for a maximum of three days in the fridge. There's an earlier thread with other opinions that should help so I'll add your post to it to keep the replies together.

    I must have asbestos intestines, because I keep things longer than 3 days on occasion and I'm almost never sick! However, I do often cook things a second time before using them. So, for instance, if I've made a roast beef joint on Sunday and haven't eaten it all by Friday, I'll make beef stew or a pot pie--something that requires a long cooking time in the oven or crock pot. I've looked at old Victorian cookbooks and they use a lot of ingredients to cover the taste of slightly rancid meat, but I figure that if they survived on it so can I.
