Heard the term used plenty of times, though I have no idea what one is (having been brought up in a world of microwaves and ready meals...)
I've built my own slow cooker out of a straw box and a well heated saucepan but I'm guessing this might be something like a pressure cooker???

No this is not anything like pressure cooking. This is a Hay Box, a very old traditional way of slow cooking. Very much still used in rural Africa.
