What can i make to use

up some tomatoes i have in the fridge.
Any ideas please?

    I use them to make a simple pasta sauce. Just fry and onion, some garlic and chopped tomatoes and peppers if you have them in some olive oil. Add a large splash of water or some white wine and simmer gently for about 10 minutes. Serve as is or whizz with a hand blender. For variations you can add a bit of basil or chilli or roast the tomatoes and peppers before frying

    Hi trisham, how about tomato and onion tart?

    Use homemade or shopbought shortcrust pastry.

    I quarter the tomatoes, then halve each quarter and take out the pulp as it makes the pastry base more soggy if it's in slices. (The time-consuming alternative would be to blind bake the pastry, oven bake the tomatoes slices separately and assemble before serving).

    Slice two onion into rings, crush a couple of cloves of garlic and saute inolive oil until golden brown. Add a sprinkling of thyme, if you have any.

    Prepare the pastry case, then spread the onion and garlic mixture over the base. Next grate some cheese over the onions, then arrange the tomato pieces into a circular pattern.

    If you have any olives, those can go in too.

    Bake for about an hour, until golden.

    Serve with salad.

    When I have a few tomatoes I make up some mock chicken spread. Lovely on sandwiches.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    Click on Strictly vegetable on the left hand side, then choose any of the soups listed depending on what other ingredients you have to hand. I can highly recommend the Veloute de Tomates.

    cheesy stuffed tomatoes


    4 large tomatoes
    100g mushrooms chopped
    2 celery stalks chopped
    1 small onion finely chop
    15g butter
    4 tbsps dry breadcrumbs
    salt and pepper and good pinch dried thyme
    1 egg lightly beaten
    100g cheddar grated

    remove stem ends of tomatoes and remove pulp, mix mushrooms, celery, onion and butter in dish and micro high 4-5 mins, stir in b crumbs,thyme, and seasoning and two thirds of the cheese
    spoon mix into the tomatoes, put them on a dish and cover with cling film leaving a vent, micro high 4-6 mins till tomatoes are tender
    sprinkle remaining cheese over, cover and leave 2-3 mins or till the cheese melts
    used to make these a lot and they are very nice
