Bank of Ireland 1st Start Mortgage Question

Hi All,
I am coming to the end of my Bank of Ireland 1st Start 3 year term. I fixed the mortgage on 5.99. I would be grateful if some of you lovely people could help me out with what to do next.
1. The Mortgage was a 100% Mortgage with Repayments of £1,022 per month.
2. What happens when the fixed term comes to an end, should I stay on the SVR or fix.
3. The mortgage was taken out jointy with my father. His name doesnt appear on the deeds, it appears in the name of the mortgage, he is effectively a guarantor. I rang BOI to ask how to remove his name, now that I am financially independent and in a better position than 3 years ago and they said if I wanted to remove him, I would have to forgo SVR and do something called an inter transfer and revert to a 5.99 5 year deal ? I don't really understand why I need to do this, can anyone help me or suggest ways around it ?
