You could cook

• a chicken, mushroom and chickpea curry
• a chicken and vegetable pie
• a chicken topped pizza
• a Chicken stir fry
• Jacket potatos with coronation chicken

All of these would use one breast and stretch to four servings.

Some very good ideas here, but it might be worth buying a whole bird to 'rubber chicken' rather than pricey chicken breasts - unless you get them on a whoopsie.

hi i normaly do buy a whole chicken when they are on offer my partner works at tesco and he got the breasts really cheap thank you for all the ideas i did put some veg in the curry and them kids didnt even notice

i work on 100g per adult and proportional amount for the kids (75ish for the bigger, 50g or so for the littly), some chicken breast are huge and by these amounts 1 would do the whole family
