  • Stir frys are a good way the stretch chicken. I use 1 chicken breast for 2 adults. I am not big on veg, but I like it in a stir-fry as the soy sauce/ginger/garlic/whatever makes it taste nice and not at all bland and "vegatable-like"
  • bulk out the curry with lentils, puree if you have to, it will make a thick and very filling sauce

You could easily get a pie from just using one, perhaps a stirfry, maybe a hot chicken stew, I call it chicken paprikash but we have a tomato based sauce, peppers, onions, mushrooms if you like, paprika to taste and any other herbs or spices you might like, some cayenne pepper and if you like and have it, some cajun seasoning, serve with rice, chips, pasta. You could think about doing a chicken supreme if you are doing a pie, and perhaps use two of the breasts, and getting two meals out of it?

  • Hey Castri

I'm a bit of a novice at all this and the real experts will be along with their replies in a minute... but I think if you're wanting to make curry for 4, you could get away with just 1 or 2 chicken breasts if you're bulking it out with veg. Read a tip on here that someone had picked up from Oriental cooking that shredding meat (think like the duck for pancake rolls at the Chinese) makes it look like there's more than there is, so you could try that, would work well in curry I imagine.

As for veg to bulk it out with, I'm not a real veg lover either but find that using grated carrot to bulk out stews and sauces is great and you can't taste it at all - haven't tried it with curry though! Luckily though the curry sauce will mask the taste of almost anything you want to put in there and if you blitz it in the blender or chop it really fine, they'll have no idea what you've sneaked in there! Lentils definitely work in curry and they go down well with me and my veg-hating OH so maybe give them a try? Or what about an old-fashioned type of curry, made with chunks of apple and sultanas to bulk it out? My mum used to make that when I was little and I loved it.

    HTH and good luck! x

You can add a diced potato or two to the curry as well as the previous posters' suggestions. Also, a can of chickpeas goes well in curry and if you're only using a small amount of chicken, the chickpeas will boost the protein content.

    Hi castri,

I would go with stir-fry, chicken fried rice or a pie as the chicken will go much further that way. These earlier threads may give you more ideas:

    stretching chicken breast

What can I do with chicken breast fillets...

I'll add your thread to the first link later to keep the suggestions together.

  • Can you bash it a bit to stretch it? And then stirfry strips. I stirfryed some chicken last night with red, green peppers and onions then served it in wraps - it was yummy. I also make chicken a la king and you could probably get away with 2 chicken breasts between the 4 of you.

    Hi There

i would go for stir fry, or curry stretched with potato etc, Otherwise, could you add extra hidden veg, thinking mashed veg can dissolve in the sauce, might get past the fussy eater
