    My pressure cooker book has a recipe which uses 75g each of butter, sugar, S R flour, and 1 egg which has a cooking time of 25 mins pre steaming then 25 mins at low pressure, so maybe you could experiment using similar quantities.

    The book also suggests that if you wish to adapt a recipe for the pressure cooker these times are a guide:

    Normal cooking time Pre steaming cooking at low pressure
    30 mins 5 mins 10 mins
    1 hour 15 mins 25 mins
    2 - 3 hrs 20 mins 50 - 60 mins

    My post no 12 didn't put the figures in the columns as I intended so I'll have another go.

    If normal cooking time is 30 mins, allow 5 mins pre steaming and 10 mins cooking at low pressure.

    Normal time 1 hr, 15 mins pre steaming, 25 mins at L pressure.

    Normal time 2 - 3 hrs, 20 mins pre steaming, 50 - 60 mins L pressure.

  • TBH the chemistry of a sponge tends to need the sugar to cream with the butter for it to work. It supports it as it rise I think. So I'm not sure if it would be possible without making a suet type crust. You can get veggie suet not sure if it is vegan though.
