Steamed puddings

We don't often do puddings but I tried Nigella's Pig's Bum at the weekend - meant to be rhubarb, but I had some leftover apples which I stewed and used instead.. it was fantastic :dance:

Essentially it's SR flour, sugar, eggs, 125g butter and the fruit stirred into the mix.

I had a quick google for steamed puddings to see what else I could try - [EMAIL="I@m"]I'm[/EMAIL] not big on the heavy carnivorous steak ones etc, and I'm not bothered about suet especially (kidding myself that a sponge one would be somewhat less fattening?)

Does anyone have any good recipes for steamed sponge puddings, savoury or not? Any ideas about how to replace the sugar in the above recipe to make it savoury?

    I always do mine in the microwave, just drop your mix into a microwaveable dish, cover loosely with a lid, nuke it for 3 minutes, stand for 3 minutes, then serve. This timing is based on a 650watt microwave, for mix that comes half way up a 1-pint pyrex dish, so you might need to practice a bit for your microwave/size of mix. I like the shape it comes out when I use a jug.

    The recipe I use is: http://hubpages.com/hub/Quick_and_Easy_Microwave_Steamed_Sponge_Pudding - I've tried it so far with jam and syrup... and I usually make up some instant custard too. To be honest that's a serves 2-3, but I always eat it all by myself :)

    I was looking at jam and syrup earlier this evening in a small Tesco to make one tonight, but unfortunately they only had 2 jams and syrup in a tin (I prefer the squeezy botttles as I find it easier to control/measure out).

    I've bookmarked your recipe now and will give that a go some time.

    Ah, unfortunately no microwave! :)
    I think Pig's Bum is meant to be 100g of rhubarb - but I did easily double this of apple, and you could stand to have more for a more apply flavour. Can't comment on how well the quanityt of rhubarb would work though :)

    I do steamed puddings in my slow cooker-saves having to keep checking the water every half hour or so.

    It takes about three hours for a suet pudding containing fruit and about 2-21/2 hours for a sponge pudding made with 6 oz flour, 3 oz sugar, 3 oz butter or margarine , 1 egg and 4 tbs milk.

    Otherwise, we do jam, lemon curd, syrup.. slurp. Making myself hungry now!

    Does anyone have instructions for steaming a pud in a pressure cooker?

    I googled pig's bum and the recipe looks delicious!

    I was intrigued by the pig's bum pudding :rotfl:. I've just googled it, and does 100g of rhubarb, 100ml of water and 1tbs of sugar really reduce down to 4 tbs?

    I'm going to have a go at veganising this I think - even my DH might eat rhubarb done this way - I have a huge bag of frozen rhubarb which needs using up.
  • I do steamed puds in the microwave too. My Mum saw my Freecycled slow cooker yesterday - oooo it's fab - and said oooo you could use that for steamed puddings. I better buy some bigger jeans!!!

    Elasticated waistbands, that's what you want ;). Kirsty Alley blames her weight gain on using those though (you don't notice the weight gain quite so much apparently :rotfl:)
