ideas for home made or shop bought ready meals for elderly vegetarian?

My mum tried them, she wouldn't eat them, nor would she eat meals on wheels.
Home help will probably insist on a boxed ready meal, rather than a frozen home made meal - crazy I know, but I guess its health & safety rules.0 -

Will she eat other chinesey type food, salmon in soy sauce etc. You could make these easily and freeze or buy from supermarkets that will microwave. Veggie cottage pie, made with quorn and mushrooms, vegetable hot pot, veg sausage and mash, chunky soups? You could make enriched breads and add cream, cheese, butter and protein powders to your cooking to add hidden calories.
Just wanted to point out that vegetarians do not eat fish. I don't want to be picky but it does annoy us veggies when people try to serve us fish because they assume it's veggie:mad:.
As to ready meals, M&S does some good fish with side veg ready meals in the chiller cabinet - some can be frozen on the day of purchase.:hello:0 -

I cook for my grandma as well as she cannot cook for herself so has to have things she can heat up. Tho she can cook things like a jacket potato and veg to go with something which is good.
I tend to cook in bulk freeze in my freezer, and then take her over three a week. I found that the best thing to use is the little foil tins because she can put them in her oven easily. they also stack beautifully lol!
I have cooked things like bolognaise, chilli, sheperds pie, fish pie etc frozen and taken over. Once you get into a routine its easy xCrafting for 2009 items doneOne patchwork blanket, two neck supports, one tea cosy, one knitted bunny, one knitted egg!0 -
I do it for my nana, this week took some frozen pasta bake, lasagna,sheperds pie.
This week going to do some home made pizza, to try & stop her buying frozen ones with god knows what in..
Does anybody know Would peppers stuffed with cous cous freeze? how long would they keep in the fridge?2010 is my DO IT year! grow own bits,savvy shopping,organised!!Get a hobby!!! be fit!! be happy!!

Please don't forget that beans are an excellent source of protein, I cant tell you how depressing it is when the vegetarian option is always 'vegetables and cheese'. Vegetable stews and chunky soups freeze well, chuck in a can of cannelini beans. Avocados are relatively high calorie and full of 'good' fats but I'm not sure how they freeze.
Many cakes and tray bakes will freeze well, cut them into portions and wrap individually before freezing.2016: No Clutter to Be Seen 805/2016

Iceland sell stuffed Peppers, so they must freeze OK. Keeping them in the fridge would depend on what they were stuffed with - a meaty stuffing wouldn't keep as long as cous cous I wouldn't have thought.Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.0 -
Some I will make myself and freeze, and I am looking for ideas - she has quite a limited diet, as she is vegetarian and does not like eggs! She does eat fish though, and loves salmon.

I guess this is why there was a suggestion of a salmon dish :beer:.
So i guess the problem is the title of the thread, the difficulty there i guess is people do call themselves veggie then go on to say how they do veggie, with fish, with dairy, without dairy, only eat eyes if on potatoes... bit like religion i guess, we call ourselves one faith or another (or abstain) - then go on to give our own version of our conduct within that faith.....nov grocery challenge, £.227.69/300, 9/25 nsd: , 7 Cmo, 10 egm.
Me, 10 yo dd, and the dog. all food and drinks, in and out, plus household shopping.0 -
This is a pet hate of mine - vegetarian is "no food with a face" so no I don't eat chicken or fish but yes I do love cheese and chocolate.
What makes it worse is when people say "So you don't eat fish, so you're vegan then"!!!0 -
Selection of ideas from our meals list; all veggie
Bangers'n'mash (+ peas or other veg of choice)
Jacket spud with cheese or baked beans
Lasagne
Moussaka (sp?)
Mushroom risotto
Nut loaf with roasties (ie potatoes, parsnips, carrots)
Nut loaf with rice and sweet'n'sour sauce
Shepherd Spy
Veg stew (beauty of this is you can bung in anything that wants using up)
Potato'n'pasta soup
Tomato soup (very good for a glut of toms from the greenhouse)
Sausages & roasties (see nut loaf idea above)
I can't offer any fish recipes, as I don't eat fish, and I've deliberately omitted most egg recipes.
