What to do with 2.6kg beef

Asda had a special deal on around Christmas so MIL picked up a rump joint 2.6kg for us. Its been in the freezer since.
For the next 3 weeks or so we are a bit short on money, we got loads of meat in the freezer but I don't know what kind of meals to make out of it.
We are 2 adults and 3 children (6, 5 & 1,5)
What kind of meals can I do with the beef to make it stretch as far as possible.

In the freezer we also got a pigeon, a rabbit and a duck (hubby hunts)that I normally make curry out of it but we had quite a lot of curry recently so any other suggestions would be fab

    When we get a large joint like that it usually gets chopped up before
    freezing to use for;

    stew
    meat and potato pie
    a steak each,
    usually cook it in the slowcooker as it is easier
    :)

    If you don't like roast duck then you could use it for pies :) Do a large stew with duck and pidgeon and rabbit - they all actually do quite well together :)

    good to know for the future but at the moment it is not chopped up. Can it be cooked in the oven and then make the above named dishes or will the meat be to tough?

    The birds were meant to be for a game pie but I thought perhaps we could make them into individual meals that stretch further, bulk them out some how.

    My culinary skills are very limited but I'm learning

    I'd do a roast one day, cold with chips the next, rissoles (Delias are fab!) and then minced in a cottage pie.
    You could always freeze cold slices too. I did this with the Xmas meat.

    There isn't far you can stretch a pidgeon to be fair... :) If you get half a dozen then you're talking pidgeon pie territory :) the only meat worth dealing with on them is the breast.
    Pie isn't bad and can stretch quite far if you serve it with mashed spuds :) serve half of it on one day and freeze the rest to serve another day :)

    Hi greenpixey,

    Yes you can cook it in the oven as a roast then use the leftovers to make other meals like a second roast meal, casseroles, pies etc. If you don't want to use it immediately you can re-freeze the meat once it's been cooked for another time. Beef can be tough when reheated so whatever I'm using it for I like to cook the leftover beef slowly for a few hours to tenderise it.

    The usual thing I do is a pie. This is how I make it:

    This is what I do:

    Left over beef chopped
    Half an onion
    4 mushrooms
    1 small potato
    any leftover veg and gravy or 1 beef stock cube and whatever veg you have.
    Black pepper
    Bay leaf (optional)
    Frozen (shop bought) puff pastry which I prefer, or homemade shortcrust pastry which is much cheaper.


    Fry the chopped onion and mushrooms in a little oil, then add the chopped potato and beef. Then throw in any leftover veg and gravy a bay leaf and black pepper and simmer until the meat is tender and the veg cooked. (slow cooker is good for this) When you’re ready to make the pie, remove the bay leaf and thicken the juices with a teaspoon of corn flour mixed in cold water.

    Roll out the pastry; add filling, top with more pastry and brush it with some milk or beaten egg and decorate if you have time. Pop into the oven at 200 degrees until the pastry is risen and golden.

    Other things I use leftover beef for are, beef stroganoff, beef baguettes with salad and pepper sauce, stir fries, cottage pie, pasties etc
