Fruit fondue... yummy. For the fondue sauce melt chocolate and add cream or evaporated milk - you don't need a fondue set, putting it in a teacup will do!

And for the fruit - anything and everything! And you can also do marshmallows and plain sweet biscuits.

Another good one is jelly then just nearly as it sets add a tin of evaporated milk, whisk it, then put it back in to set!!! My mother in law calls it Wind - it's lovely!!

    So refreshing!

I've tried this with normal milk as well and it's nice too. Ev milk is pretty exp here. I used trim milk which is half the normal fat that full cream milk has.
Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    Quicker easier summer pudding.

    Sliced brioche
    berries
coulis (berries whizzed in processor with icing sugar)

Use pastry cutter to cut brioche into circles.
    Soak circles in coulis
    Place in a ring
    Add berries
    Add another circle of brioche

Keep going until you reach the top of the ring. Remove ring, put berries on top, decorate with a final swirl of coulis. Serve

    :D

Eton Mess .... but I add strawberry sauce. Whiz strawbs with icing sugar in a processor. Push the sauce through a sieve to remove the seeds (optional). Combine meringue, sauce, cream and whole/halved strawbs.

Summer pudding doesn't have to be made in a basin with the bread cut to fit.You can make it in a serving dish like a lasagne.Layer cooked berries and slices of white bread.Pour the extra juice from the berries over the top and chill.

I don't see why you need wait 24 hours for this.

Btw it's so much nicer with fresh berries and this is THE time of the year to get homegrown raspberries, redcurrants and blackcurrants.

And when it gets chillier and Autumn is in the air,try brown bread with blackberries, apples, elderberries and damsons.

In fact (I'm on a roll here:D ) in Spring you could use rhubarb and early gooseberries or strawberries. And in Winter what about dried fruits or mincemeat,or cranberries?

Thanks for the suggestions on the summer pudding. I never thought of doing it any other way than the traditional way in a pudding bowl with a large weight on top. I have some fruit coolie in the fridge that I made last night so here goes. Baby in bed will start creating:)

Could you do it with gelatine ?

In the good old days, jelly was simply fruit juice set with gelatine. Now .....

Yes - you can make it with gelatine. I would use the juice of 4-6 limes (or fruit of your choice), sweeten to taste and top up with water 1 pt. Add sufficient gelatine for a 1pt quantity of liquid. Soak the gelatine and process in the usual way.
