an easy pud for hot days

Coconut lime jellies

serves 4 1 pkt lime jelly
finely grated zest and juice 1 lime
1 x 400ml tin coconut milk

melt the jelly in 150ml water, add the zest and juice of lime, whisk in coconut milk, pour in bowl till set or 4 ramekins

mango sauce
1 x 425g tin mangoes in syrup
zest and juice 1 lime

whizz the mangoes with 3tbsps of the juice, stir in juice and zest of
lime

nice on a hot day or after a spicy meal

    Rachie B, I would assume it would work really nicely with a pineapple jelly.

    Another good one is jelly then just nearly as it sets add a tin of evaporated milk, whisk it, then put it back in to set!!! My mother in law calls it Wind - it's lovely!!

    So refreshing!

    when i had the kenwood chef i used to whisk the carnation milk really thick and melt a jelly in the micro with a little water then drizzle it into the milk with the mixer running, lovely and light

    Cube a pineapple - sprinkle with a good half teaspoon of cinnamon and some brown sugar and any alcohol you have - martini, wine, fruit spirit and either bake in the oven for 15 + mins (or wrapped in foil) or cook in a wok if like me you don't put the oven on in hot weather!. Can be eaten hot immediately, or kept in the fridge. Tastes really good. :D

    You can do this with apples/pears/peaches/nectarines/apricots etc - cut in half rather than cubed - the less weight conscious might add a knob of butter to each half too:drool:

    I had cold apple crumble yesterday. I suppost a lot of hot puddings would be nice refridgerated and served with ice cream. Crumble, pies, sponge puddings with summer fruit.:drool:

    Summer pudding - possibly my all time favourite pudding (and its only bread and fruit!!). Shame you have to make it 24 hours before you can eat it.
