Changed breadmaker yeast - poor results!

  • I love the doves farm yeast. I recently switched to it and get much better results than I did with either hovis sachets or tesc or sainsb sachets. I am using Allinson flour at the moment.

  • Just a thought - have you checked the quantity of yeast to flour on the Dove packet and compared it to what your breadmaker recipe asks for? I only ask because my BM recipe book asks for half a tsp of yeast per lb of flour, whereas the Dove packet (I think) states double the amount of yeast. I ignore the BM recipe book and go by what is on the Dove packet and (so far) have had great results, with Tesco's own and Allinsons flour. I also use 1/3 boiling water and 2/3 cold water although the BM recipe book doesn't specify that.

    funkeymonkey I had exactly the same problem with the orange pack of Doves,even the 1st loaf from the freshly opened pack was a disaster,so i went back to using the sachets-fiddly,but at least they are reliable.
    Slimming World..Wk1,..STS,..Wk2,..-2LB,..Wk3,..-3.5lb,..Wk4,..-2.5,..Wk5,..-1/2lb,Wk6,..STS,..Wk7,..-1lb.
    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)

    I'm very interested to read this. I made my first ever loaf of bread yesterday (I usually make rolls to help me control portion sizes!) and it wasn't as well risen as I would like and was a bit heavy. I was just having a read through the forum to see if I could find any tips and this has given me a few pointers....

    Firstly, I used the doves farm yeast which it would appear can be a bit hit and miss

    Secondly, its been open AGES!!! I never thought it might be less active! It seems to work okish but fairly slowly! It was great when I made english muffins and crumpets or so I thought.....perhaps they would be even better with fresher yeast!

    Forgot to say, I don't use a breadmaker, it was a handmade loaf.

    I recently found some amazing granary flour from a local mill through my local farm shop. It is £5 for a 5Kg bag and I use 250g of it with 150g of white bread flour for each loaf. Maybe I'll give plain flour a go, especially as its mixed in with the other flour...and if it saves a few pennies!:money:

    Just an update: made a loaf with doves farm yeast using 1 1/2 tsp instead of 1 1/4 tsp (in the recipe) and the bread came out much better :)
  • I've just started using the Doves yeast in my BM too & haven't had any problems with it :)

    1 1/4 tsp for a 1.5lb loaf with Carrs Breadmaker Flour

    I use lukewarm water, I don't know if this actually does anything but it works for me :)

    I find all the quick yeasts much of a muchness too, for hand or machine-made bread

    what I find makes the real difference is the flour, & bear in mind the same brand can vary from batch to batch & season to season

    I use Fermipan too & because it's such a big pack (500g I think) it usually works out cheaper
    I decant some into a small airtight container & keep it in the fridge for immediate use, the rest I seal in the pack with a clip, then keep in a Lock&Lock in the freezer till I need more
  • I use Dove's Farm yeast in the orange packet and own-brand strong flour - good results every time.
