Holidays Abroad (last minute)

Myself and my OH are looking to go away for a week at the begining of august,
Ive never booked holidays or anything before so am looking for some advice,
1) is it better to wait for the last minute to get a good deal? (we have limited funds so the cheaper the better)
we dont mind within reason where we go along as sunny and friendly, can anyone offer any help good website etc and advice on going at the last minute to booking in advance
