My mum used to make us eat it out of a cup when we were little as it meant when we inevitably knocked it over less spilt.0 -
I made the pancake recipe which Jamie Oliver did on his family show before Christmas, and my daughters loved it. You can make the batter up in a jug, keep it in the fridge, and just bring it out as you need it. It's great with any fruit.

porridge is good - you can either make it overnight in the slow cooker or the lowest oven setting or make a big batch, let it get cold and then divide into portions.
Sausage popovers - cooked chopped sausage and yorkshire pudding batter divided between muffin tins (could also call them mini toad in the hole)0 -
Not quite sure how "interesting" my breakfasts are but I have bacon Sandwiches, no not every day
or Beans on Toast.

my fave quick breakfast and incidentally all the grandkids love this - is weetabix with hot milk. they like a little sugar sprinkled on top. but for one and half weetabix a half mug of milk takes about 30 to 40 seconds in microwave!

Thank you all for your great ideas - am particularly liking the savoury flapjack and muffin ideas as these will freeze well - never thought of those.
If anyone has had particular success with toastie pockets for things other than toasties I'd love some ideas for these too.0 -
speedy response! thanks for your input so far - am absorbing it all.
he loves smoked fish risotto etc. so probably would do kedgeree. I personally don't like the texture of reheated rice (and it would have to be pre-made and frozen) but he might.
One thing he won't eat is egg yolk - not from toddler age - loves fried egg white, and loves omelette as long as the egg is well mixed, but boiled eggs is out - which is a pity because I think they're a top breakfast.
I make various muffins and they freeze so well, but never tried savoury - sounds perfect for breakfast.
MY youngest DS hates egg yolk too but loves boiled eggs sliced without the yolk, on toast. Maybe yours would, too?

I'm not overly keen on cereal for breakfast either, apart from porridge or weetabix/malties. We have the following 2-3 times a week, with a quick toast/cereal on the other days.
- scotch pancakes with chopped berries/banana drizzled in honey
- scrambled egg (whites for your son) muffins - think healthier Egg McMuffin
- sausage/bacon/egg wraps with a small amount of ketchup and cheese (haven't had this for ages but I batch cook & freeze them, taking them out of the freezer the night before)
- a continental sliced ham, cheese and yoghurt breakfast
- bacon and eggs very, very occasionally if I'm up early!
You could also have toasted sandwiches. Or pancakes; I did make mine heart shaped pancakes one day last week, but it took forever!
My children either have milk, fruit juice or smoothies for breakfast. And bananas, yoghurts and toast is always available regardless of what else they've eaten.
If we're really tired an unable to face breakfast, I have also offered flapjacks with a small banana and glass of milk. They're always fine once they start eating, but sometimes rather tired.
