Non-cereal breakfast ideas requested

I like my 9yr old son to have a good and varied breakfast before school, and he's also going along the learning to cook road with me.

Time is very much of the essence and breakfast in our house is not the time to help him make something from scratch!

My preference is homemade recipes, pre-cooked or pre-prepared and frozen and a variety of choice so way boy and I can make several weeks' worth. While some days toast/bagel etc. type stuff is fine, I'm really keen on ringing the changes.

I've had ideas about using Toastie pockets - so far I've come up with HM american banana and blueberry pancakes (or variations on that theme), eggy bread (pre-made and frozen in slices) as well as the obvious cheese on toast thing.

I've tried to give as much info as I can and would be very grateful for help.

    would he eat kedgeree (smoked fish and rice, with indian spices)?

  • I made some savoury breakfast muffins at the weekend, now in the freezer to eat as and when. Can warm them up in the microwave. With bacon, cheese, spring onions and peppers.

    I used a US recipe (Eatingwell.com) and its quite nice but I think I would search out UK next time - there's some on the BBC Good Food website I think.

    Breakfastandbrunch.com do lots of different recipes.

  • HM scones and jam, HM cheese scones with butter, sardines on HM toast, HM muffins, HM tea cakes, poached eggs with ham on HM toast, "toast tooper" such as basil and tomatoe and cheese and ham etc, mackrel/sardines etc with spinich and eggs, good old baked beans on HM toast, french toast.

    all i can think of at the mo!

    speedy response! thanks for your input so far - am absorbing it all.

    he loves smoked fish risotto etc. so probably would do kedgeree. I personally don't like the texture of reheated rice (and it would have to be pre-made and frozen) but he might.

    One thing he won't eat is egg yolk - not from toddler age - loves fried egg white, and loves omelette as long as the egg is well mixed, but boiled eggs is out - which is a pity because I think they're a top breakfast.

    I make various muffins and they freeze so well, but never tried savoury - sounds perfect for breakfast.

    I made the pancake recipe which Jamie Oliver did on his family show before Christmas, and my daughters loved it. You can make the batter up in a jug, keep it in the fridge, and just bring it out as you need it. It's great with any fruit.

    hm cereal bars, popovers (kinda like yorkshire pudding batter cooked in a muffin tin with sweet or savoury fillings) rolled omlettes

  • You could try the continental breakfast like you get in hotels. Sliced ham and sausage, roll mops, different cheeses, bagels, toast, fruit and yoghurt. Put it on plates and let everyone help themselves.

    Savoury flapjack?

    150g oats
    50g butter
    150g grated cheese
    2 eggs
    Grated carrot/courgette/squash/sweet potato

    Mix it all together with herbs of your choice and put in an 8inch tin. Bake in the oven 180 for 30-40 minutes. Stick it in the freezer and defrost portions as you need them.

    How about bran muffins and a home made smoothie!

    Soak 1 cup all bran, 1 cup sugar and 1 cup mixed fruit in 1 cup of milk for 1/2 hour. Stir in 1 cup of SR flour and pour into muffin cases. Bake for 20-25 mins on 190c.
    Smoothie could be honey, banana, oats and milk or a fruit one!
