  • Sorry alliads, I saw your post mention frosting and didn't click the link as I thought it was just about topping and not the recipe hence the reason for asking for one.

    johnjay - I would add the finely grated zest of an orange as the juice would make the icing runny.

    aliadds - To save space in the fridge, I leave my carrot cake muffins un-iced in a tin. I make a batch of icing which I keep in a small covered bowl in the fridge and just spread some on the cakes just before serving.

    Remember to use full fat cream cheese as the low fat versions become very runny when you add the icing sugar!

    My kids have to do carrot cake cup cakes this week for DT at school.
    The simple recipe they use is as follows -

    4oz/100g margarine (vegetable)
    4oz/100g sugar
    2 eggs
    6oz/150g wholemeal flour
    1 large carrot grated
    2oz/50g sultanas
    2oz/50g chopped nuts.

    12 paper cases required.

    light/set oven to gas 5/190c
    cream butter and sugar
    beats eggs and gradually add to butter and sugar mix
    stir in flour
    stir in carrots, fruit and nuts.
    spoon into cases and bake for 20 mins or till golden brown and firm.

  • Ooo thanks for the recipes everyone. I've just had my weekly grocery delivery from Mr T and we have a few sad looking carrots left from last week I think my boys are getting sick of carrot and coriander soup :) I'll make a carrot cake instead, we also have a glut of cream cheese so I can use that for icing and it'll keep my 4 year old occupied, he can supervise :)

  • Right, I've just managed to make 18 cupcakes using the BERO recipe and they are lush. I've iced 9 of them, can I freeze the others??

    Yes no problem freezing them without the topping. Glad you liked the recipe. I find it really easy.
    I've just made the fruit scones from the Bero book and they're in the oven as we speak.
    Bit of a bus mans holiday for me as I'm a baker! ;)

  • Aliadds - Thanks for the recipe it really is lovely. If you have any spare cake send it to our house :) I must admit I love my BERO book, I've always had one and my Mum and Granny used to always use them when I was little. it's a great book isn't it??

    Yes Jolly I grew up with it as well and it's my baking bible. I often buy one in Morrisons to give to a friend who's just starting on the baking journey!
    My online food bible is BBC Good Food. I look there for any recipe's I need. And of course mustn't forget MSE:T

    Great recipe - cupcakes made and taste yummy!

    Butter icing nice too though it's separate at the moment!
