Pork cooked in cherry coke - alternative

Hi! I have a pork joint that I would love to cook in coke or cherry coke. Never tried it, but it sounds delicious. However, as a diabetic, I'm not allowed the levels of sugar that are in these drinks, and the recipe won't work with diet drinks. Has anyone got an alternative they can suggest? I was going to cook the pork in the slow cooker, but in the oven is also a possibility. Any suggestions would be greatly appreciated!

    I used to have a recipe from Slimming world and it was chicken cooked in diet coke. I tried it and wasn't that impressed to be honest.

  • i might try that... only problem is cherries are well out of season... could use a tin of cherry pie filling, but the problem will be the sugar again.... i wonder if maybe a cooking liquid based on watered down reduced-sugar jam might work?

    You won't like hearing this, but it's precisely the high sugar content in Coke that makes this dish work. The Coke reduces down, leaving a sweet caramelized coating on the joint.

    How about roasting the joint as normal and serving with caramelized onions instead? There's a natural sweetness in onions that doesn't come from sugar. Not quite the same I know...:undecided

    i know! i quote myself: "the recipe won't work with diet drinks"

    might try it with a mixture of onions and some sweetening agent.....

    I used diet coke for the ham in coke and thought it was okay. I have had some morrello cherry sugar free (diabetic) jam that I have used with duck before. Think it's made by Stute.

  • I've nevger understood why Nigella of all people suggested to people that they cook a nice piece of meat in sugar, caramel and phosphoric acid :confused:

    I'm cooking gammon at the weekend and it will have apple juice and fresh vegetables added to it ;) Any stock left over after gravy is made will become the base of a bacon and lentil soup - you can't do that with the remains of cherry coke :D

    Are you sure you don't mean a ham/gammon joint? I think cooking a piece of uncured pork in any kind of liquid will be a bit odd and a complete waste of crackling. The salt from the ham or gammon contributes to the flavour of the cooking liquid.

    Last time I cooked a joint of ham I toyed with the idea of doing it in coke but then couldn't bring myself to buy the stuff (blerghh!) so I did it in cider. It was delicious ;) And as Penny says you get lovely stock too.
