One seacret is to make sure that the chicken is not over cooked - with the fears of salmonella still with us from the (80's?) there is a tendancy to cook the life out of chicken (partic breast meat) making it dry and horrid.

Butterfly the breast and grill under a medium heat checking for when the juices run clear then you can cool, slice add sweetcorn, mayo, black pepper to taste and, if desired, a little onion salt or garlic salt if you want.

    Cheers

I seriously wouldn't bother making your own mayo, It's not worth the hassle.

I poach my chicken breast (no added fat) then chop it mix with reduced fat mayonnaise and value sweetcorn, seasoning and some fresh herbs if you have.

Mmm hungry, not made tea yet.

Try mixing salad cream and mayo together, then adding to it, I find it tastes even better!!

I would only leave it 3 days max, but that just me. You have to be careful with both chicken and mayonnaise. Do the sniff test.
