You could screenprint the screen to keep a record, its hold power button then press home button and release. will take a picture of whatevers on the screen.
thats all i can think of. this would be the easiest way

If you are with O2, then you can sign up for free for their BLUEBOOK and all your text messages are saved on there. Has come in very handy when I have been a bit quick on the delete button !!
