Often cabbage & simmer soup is plenty, I slap a load of tabasco in there! simmer soup 25p a packet

The onions were from a 2kg bag (asda smart price). Tiny and a bit fiddly to use, but work out very cheap. The carrots were tesco value 85p for 1kg.0

And if you have an Aldi or Lidl near you they usually have good veg offers on. At Aldi this week they have 2 leeks for 59p and a small bag of potatoes for 39p, add 2 stock cubes (25p for knorr but there are cheaper ones) and there you have a big pan of leek and potato soup for £1.23 plus 20 mins electricity. Mmmm, just right for a grey day"Who’s that tripping over my bridge?" roared the Troll.

Sainsburys also have a really good deal on fresh veg at the moment. Lovely big savoy cabbages are 30p, as well as 4 packs of baking potatoes for 30p. I've bought loads!0

I made 7 generous portions of veg soup yesterday (which I think tastes much nicer than shop-bought).
Here's what it cost:
Large butternut squash £1.30
2 small onions 5p
Small swede 20p (whoopsie)
3 carrots 25p
2 stock cubes 8p
So, £1.88 in total and 27p per portion. But I would argue that it's a lot healthier than tinned soup so definitely worth making.
I made almost the same yesterday, but with a big parsnip instead of butternut, half a swede and a large onion. Oh and added a small potato.
Cost:
Onion 15p
Parsnip 35p
Swede 17p (half)
3 carrots 20p
1 small potato 7p
1 stock cube 4p
This is 4 (very) large portions for 98p. There's no way I'd eat only the equivalent of half a tin, I have a big bowlful:)
I make all sorts, almost always veg-based, usually with lentils as well, and beans if I've soaked/cooked them for something else.
I rarely add tinned tomatoes as they're expensive, besides tend to make every soup taste the same.
Still curious as to what 'simmer soup' is!0 -

Ace ideas, I go on the hunt for cheap veg tonight. I freeze it in small portions
1/2 a tin is all I can manage, feel full very easily! probably get a couple of weeks meals out of one big batch

I've just made 2 soups out of virtually nothing. First one was from ham stock saved & frozen from cooking 2 hamhocks in the slow cooker, half a carrot, an onion and a handful of herbs from the garden, a scoop of yellow lentils, then blitzed in the blender. Second was 2 chicken stocks made from chicken carcass & frozen, veg left over from Sunday dinner when husband cooked too much and a scoop of yellow lentils, blitzed 3/4 of it to leave some chunky bits. (Even remembered to do that one in the slowcooker overnight when our electricty tariff is lower.....I think I really am turning into my Nan!)2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever

I've just tried to check that the sainsburys offer is still on but can't find it online. Think it started on 21st Oct, but don't know when it ends. Don't want anyone to have a wasted trip.0
