    its back in the freezer. I remember watching jamie make bubble and squeak massive one, then put dents in each corner , popped the eggs in but i cant remember i fthey cook that way or in the oven. Off to try find the recipe. :) Going to use frozen onion, but will quickly fry them first?

    in my house rissoles are either made using leftovers from sunday lunch - minus the gravy, or
    cook some potatoes carrots and onions in a pan until soft. add some corned beef - you can use small or large tin depending on how much veg you have.
    let cool
    form into patties and cover both sides with flour then shallow fry until brown and crispy and cooked right through.
    the family used to love these with chips and brown sauce!
    the first lot - well - sunday lunch leftovers now get frozen in little freezer bags and used for toddler meals for grandkids.

    I always add a little gravy if I have any left over- I find it helps to bind the rissole together. Very nice served with fried onions and baked beans too.

    Corned beef rissoles were a staple when I was a kid. My mum managed to s-t-r-e-t-c-h a tiny amount of corned beef and make them quite big and chunky. She just used potato and onion and dipped in egg and breadcrumbs. We had them with brown sauce, peas and half a fresh tomato each and thay were sooo tasty. She used lard for frying in those days and a guilt about eating them fried (because I know how greedy I can be) has meant they haven't figured largely on my menus. Must experiment with some kind of oven-baking maybe.

    I used to buy Birdseye Rissoles in the early 70's but I'm sure they had either rice or pearl barley in them, along with some 'meat' and pots/veg. They were also coated with breadcrumbs and thicker than a Birdseye Fishcake.

    Does anybody else remember those?

    I couldnt find that particular one. I did find a bubble and squeak by him - but it didnt have the eggs on top - here 15 mins in (nice caramalised onion gravy in there too )

    After all the advice I gave in and made pasties instead. My head was swimming and i didnt want it to be a disaster as was for me and my brother. I literally needed someone to tell me clearly what to do with my set of ingredients:o

    MMMM . The one i watched, he made 4 dents, one in each corner. And cracked an egg into each one and put it in the oven enough for the eggs to cook = 10 mins?

    Right i had pie mix left from last night which was - mash potato, cheese, fried onion, mustard, piri piri sauce and s and p. I threw in some cooked cabbage and bacon and made into burger shapes which i am now frying ! Look nice. Will report back.YUMMMM! So hungry.
