Would you be able to use a crossover cable for connecting a PC to a router or are they exclusively for PC to PC?

Cross-over cables are used to connect 'like' devices such as 2 pc's. Straight through should be used for PC to router.

Historically (and I am being simplistic here, so techies - don't shoot me down ...) crossover cables have been used to connect computer to computer, rather than computer to communications device.

For what we are talking about here, you would not need to use a crossover if you are connecting your PC to a router-type of device. Also, these days most routers etc would auto-detect and internally implement cross-over if needed anyway.
