What to do with crappy potatos?

Options
I have been given a bag and a half of potatoes which is great but they are not very nice. They fall to bits when boiling for mash and make horrid roasties. Don't know why though I wondered if they were quite old? Anyway don't want to waste them and just wondered if anyone had any ideas of what to do with them?
Thanks

  • chuck some into a big pot with leeks, one onion, 10 fluid oz milk and some veggie stock and make into potato and leek soup. yum yum x
  • They sound like they should be great for chips or you can grate them from raw and make rosti potatoes like the Swiss do. Yum! If they're not too big you could boil them unpeeled and then once cold, slice and fry them. They're lovely like that with some beaten egg tossed over them and maybe some crispy bacon crumbled in as well.

Corned beef stew, I use any spuds (better if boiled a little to remove some excess starch first), corned beef, chicken/veg stock, soup mix/pearl barley/lentils/split peas/beans, root veg, peas etc whatever is in. Stick it all in a slow cooker/large pan & cook for ages......serve with dumplings if feeling naughty or crusty bread. Great in the cold weather.
One day I might be more organised...........

  • if you bake them in the microwave and then scoop the inside out to make mash they should be much less watery?

Peel them then layer them in a shallow dish with sliced onions and butter/marg. Cover with foil and bake for about 90 minutes. Grate some cheese on top and put back in the oven for another 10 minutes.

  • I might have got some of the same in a brown sack from ASDA. I have tried everyway known to man to cook them and they always end up tasting like raw potato. The best way was to slice in a dish cover with chicken stock, season, cover with foil and bake for hours.

    Potato wine.

That's what I did with the tail end of a large sack of spuds some years back, and it was lovely.
