Agree with wigginsmum, would always use dripping or lard for preference, but if I have a veggie at the table they still come up good with oil.You never get a second chance to make a first impression.0

I use floury pots but don't parboil - I put them straight in the roasting tin and cover with olive oil and some chopped rosemary - they taste great.

My DH makes great roasties and he swears by giving the pan a good shake to soften the edges of the potatoes. It seems to let the oil seep into the outside and have something to stick to, making them nice and crispy. (He heats up the sunflower oil in the oven first.)May all your dots fall silently to the ground.0

I always use Olive Oil put the tray with the oil in the oven to heat at the same time as I put the spuds on to parboil. Once drained, put lid back on pan, give a good shake to rough up the edges, the tip straight into the piping hot fat (using the lid as a shield
) Turn them once to coat then pop back in oven at 190c for 1hr.

hi many thanks to you all i seem to be going wrong at a few places i always put them in water and just as they stared to boil take them out and then i put thenm stright in a baking tray with loads of cold veg oil so i will try out the way you have adivesd and hopfully they wont be soggy as usall thank you earwigi cant slow down i wont be waiting for you i cant stop now because im dancing0

I haven't tried goose fat, but so many people have recommended it. Do you buy it in tins or what?The ability of skinny old ladies to carry huge loads is phenomenal. You can get goose fat from your butcher or perhaps they will order it. At Christmas Tesco Asda etc sell it. I tent to buy when ever I see it. Your roast potatoes will be heavenlySuicide is a permanent solution to a temporary problem.0

I have never par boiled my Roasties. Just cut your potatoes in half stick them in a roasting tin pour some olive oil over them and stick them in the over for about three quarters of an hour and they are done.Please Thank Me
