Brine, Turkey, Frozen, will it be worthwhile?

Just need a bit of advice regarding brineing a turkey.
We haven't had turkey for many years now, switched over to goose.
I bought a frozen turkey about a month or more ago and stashed it in the shed freezer, we are planning to cook it boxing day so we can have it on sandwiches etc. My problem with turkey has been that we find it too dry for our liking, so wondered if anyone has brined a frozen turkey, and was it worth the extra effort?

Oh, and can I start brineing it before it has completely defrosted?

  • Hi, once we discovered Nigella's brine recipe I have only bought frozen ones - I thought that there was no diffference between the very expensive free range numbers and one of 'Bernard's'. I've only ever defrosted before brining so can't help you there sorry. Just bought mine today - Mr. T had them on offer so very reasonable.

  • Hi Tilly, Thanks so much for that, I took the turkey out this morning to defrost, so by Thursday it can go in the brine.
    May not have all the ingredients for the Nigella recipe as we are pretty well snowed in and any last bits were to be bought today! Never mind though, I'm sure i can substitute a few bits.
  • Another vote for brined turkey here - we do the nigella version too

    Looby I don't always have all of the ingredients - just the main spice ones and fling anything else in that would be tasty.
    Saffsie - I put it in the bath on Christmas Eve morning so that it has a full 24 hours swimming!!!

    I've never heard of brining a turkey....what do you do and what difference does it make?

  • The turkey was lovely, will always cook this way in future, 8.2kg of very succulent meat.
