What is the difference between M and H type XD memory cards? Some don't have an M or an H.

Basically its the method of encoding they use to store the image/data on the card. However there should be no difference to the operation or quality.
You need to make sure your camera can support the type you intend to buy.
Fujifilm's website has some details on this, http://www2.fujifilm.co.uk/digital/accessories/storage_media/xdcard_typeM/
The is also some info on Wikipedia, http://en.wikipedia.org/wiki/XD-Picture_Card0
